Running new hot water lines

I am planning to run 3 new lines (1/2 inch) from my 3/4 inch hot water line. Currently I dont see any stop valve on the hot water pipe coming directly out of water heater. How can I stop the hot water supply? do i shutoff the water heater… any issues or points to be considered while doing that?

being a novice, any help with detail answer highly appreciated.
