I recently cut and soldered some joints but failed to removed to internal burr from the tube. I have now read that this will cause turbulence and lead to corrosion of the copper. Is this true? Do I need to take the joints apart and re-do them?

It is a judgment call on your part. If the pipes are large enough that the velocity is low, there should not be a problem. Hot water is more likely to have the problem if erosion were to occur.
