I’ve heard that slip joints should be used on vent, drain, and source pipes to allow for log wall settling. How should these slip joints be constructed so that they meet the Uniform Plumbing Code? Where should they be installed?

YOu do not construct them, you purchase them. And they are installed anywhere that the settling of the structure could cause problems in the piping, typically between the floor and ceiling of each elevation.
