I accidently dropped a hammer on my toilet and shatter a piece of it. Will caulking the piece back on last or even work?

Replace it. The cracking can weaken the integrity of the bowl. IF it goes under the weight of somebody they are sitting on top of a bucket and a half of broken glass. really stuff up ya no claim on your insurance policy
