High density plastic would be PEX, right? That and PVC, CPVC and PE plastic are basically inert. OTOH, copper is leached/corroded into water by many things, hence the pinhole leak problems with copper. Also the new US NSF standard 61 bans copper in water of less than 6.5 pH.
