My 6 year old gas water heater makes a “banging noise” whenever a commode is flushed or the dishwasher is
filling and then stops filling or when the washing machine is filling and then stops filling. Could this be caused by
air in the water heater or in any way connected to a defective “Dip Tube”?

Dan this sounds like a problem with the quick closing solenoid valves in the equipment in which you have told us about. The valves close quickly and create a water hammer problem. this can be taken care of by installaing a water hammer arrestor tank ia your water system. Good luck let us know how you make out.
